Brunch Casserole

This is the casserole I brought to MOPs yesterday:

2 c frozen hashbrowns
1/2 c cheddar cheese, grated
1/2 c parmesan or asiago cheese, grated
2 tbsp. chopped onion
1 lb breakfast sausage
6 eggs
1/2 teas. salt
1/2 teas. pepper
2 c milk
1 teas. dry mustard

Brown and drain sausage. Saute onions for a moment in the same pan. Thaw potatoes and place 1/2 in bottom of 9x13 casserole. Add 1/2 of the cheese and 1/2 of the sausage on onion mixture and repeat.

Beat eggs, salt, pepper, mustard, and milk. Pour liquid over top of ingredients in casserole. Leave in refrigerator overnight (I skipped this step!). Bake at 350 for 45 minutes.
