Last Saturday, Jeremy was spending the night at Grandma's house, and Zachary was looking for something to do. Remembering the fun he had had with Jeremy a few weeks before whipping up a brownie mix, he decided to make cookies. Oatmeal raisin are a favorite of his Dad, but we shook things up a bit and he made oatmeal M&M cookies. The recipe was from Quaker's website, and here it is, adapted:
2 1/2 sticks butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3 cups oats (quick or old-fashioned)
1 cup chopped walnuts
1 1/2 cups M&Ms
Heat oven to 375. In large bowl, beat butter and both kinds of sugar until creamy. Add egg and vanilla; beat well. combine flour, baking soda, cinnamon, salt, and nutmeg, and mix well. Add oats. Mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 10 minutes.
